Ingredients

Albacore

  • 12 oz sashimi-grade Pacific Albacore loin
  • Flaky sea salt
  • Freshly ground white pepper

Meyer Lemon Dressing

  • 3 tbsp extra virgin olive oil
  • 1½ tbsp fresh Meyer lemon juice
  • 1 tsp Champagne vinegar
  • ½ tsp finely grated Meyer lemon zest
  • Sea salt

Garnish

  • ¼ cup Castelvetrano olives, finely sliced
  • ½ small fennel bulb, shaved paper thin
  • 2 tbsp capers
  • 4 radishes, thinly shaved
  • Fresh chives
  • Fennel fronds
  • Extra virgin olive oil

Preparation

Whisk together the extra virgin olive oil, Meyer lemon juice, Champagne vinegar, and lemon zest, seasoning lightly with sea salt. The dressing should remain bright and clean, with enough acidity to balance the natural richness of the Albacore without curing or overwhelming the fish.
