Fregola Sarda is a variety of durum wheat toasted pasta, which hails from the island of Sardinia, off the coast of mainland Italy. It is similar to Middle Eastern couscous, but toasting and rolling the pasta in semolina create a rough-textured surface that enables sauces to cling exceptionally well. We carry the medium size.
Fregola is extremely versatile, and lends itself to dry or creamy preparations.
Serve as you would with pasta or couscous, as a hearty side or main course. Works well with red meat, seafood and a wide range of vegetables.
