Hedgehogs (Hydnum repandum) are premium wild mushrooms, reminiscent of the Chanterelle due to its vibrant orange coloring and its nutty, peppery and sometimes fruity flavor. The distinctive feature is the downward projecting teeth on its underside.
Author Michael Kuo, author of 100 Edible Mushrooms, gives it an edibility rating of “great”. When cooked they’re very meaty in texture and hearty in flavor. They can be pickled, simmered in stock, and take kindly to butter, garlic, cream and fresh herbs.
