Grey, oyster-colored mushroom, grown for us in Oregon features gentle, sweet flavor with a fruity aroma.
Tear them to stir-fry or saute. The thin cap cooks quickly. Also makes lovely addition to cream sauces for poultry or seafood, or simple soups.
