Ingredients
Petrale Sole
- 4 Wild Pacific Petrale Sole fillets (6–7 oz each)
- Kosher salt
- White pepper
- Wondra flour or all-purpose flour, lightly seasoned
- Grapeseed oil
- 2 tbsp unsalted butter
Vin Jaune Cream Sauce
- 2 shallots, finely minced
- ½ cup Vin Jaune (or dry sherry as an alternative)
- 1 cup fish stock
- ½ cup heavy cream
- 2 tbsp cold unsalted butter
- Sea salt
- White pepper
Garnish
- 8 oz fresh wild mushrooms, like Morels or Chanterelles, cleaned
- 12 baby fingerling potatoes
- 2 tbsp unsalted butter
- Fresh thyme
- Chervil
- Lemon zest
- Flaky sea salt
Preparation
Roast the fingerling potatoes until crisp and golden. Sauté the mushrooms in butter with fresh thyme until lightly caramelized and season with sea salt and white pepper.
For the sauce, gently cook the shallots until translucent, add the Vin Jaune and reduce by half. Add the fish stock and continue reducing before incorporating the cream. Simmer until lightly thickened, then whisk in the cold butter immediately before serving to create a smooth, glossy finish.
Lightly season the Petrale Sole with kosher salt and white pepper, then dust very lightly with seasoned flour. Heat a sauté pan over medium heat with grapeseed oil and cook the fillets until lightly golden on both sides. Add the butter during the final minute, gently basting to keep the fish moist while preserving its delicate texture.
To plate, arrange the roasted fingerling potatoes and sautéed mushrooms on warmed plates. Place the Petrale Sole alongside, spoon the Vin Jaune cream around the fish, and finish with fresh chervil, lemon zest, and flaky sea salt.
