Ingredients
Rockfish
- 4 Wild Pacific Red Rockfish fillets (6–7 oz each)
- Kosher salt
- White pepper
- Grapeseed oil
- 2 tbsp unsalted butter
- 2 garlic cloves, crushed
- 4 sprigs thyme
Saffron Risotto
- 1½ cups Carnaroli or Arborio rice
- 1 shallot, finely diced
- 2 tbsp unsalted butter
- ½ cup dry white wine
- 5 cups warm vegetable or fish stock
- Pinch of saffron threads
- ½ cup grated Parmigiano-Reggiano
- 2 tbsp mascarpone
- Sea salt
- White pepper
Crispy Leeks
- 1 leek, julienned
- Rice flour
- Neutral frying oil
Lemon Herb Gremolata
- 2 tbsp finely chopped flat-leaf parsley
- 1 tsp finely chopped chives
- 1 tsp lemon zest
- 1 small garlic clove, finely minced
- Extra virgin olive oil

Preparation
Prepare the risotto by gently sweating the shallot in butter before adding the rice. Deglaze with white wine, then gradually add the warm stock infused with saffron while stirring continuously until the rice is creamy and perfectly al dente. Finish with Parmigiano-Reggiano, mascarpone, and season to taste.
Lightly dust the julienned leeks with rice flour and fry until crisp and golden. Drain well and season lightly with sea salt.
Combine the parsley, chives, lemon zest, garlic, and a small amount of extra virgin olive oil to create a bright gremolata.
Season the Red Rockfish fillets with kosher salt and white pepper 20 minutes before cooking. Heat a sauté pan over medium-high heat with grapeseed oil and sear the fillets until lightly golden. Add the butter, garlic, and thyme, basting continuously, then finish in a 375°F oven for 3–4 minutes until the fish is just cooked through and flakes easily.
To plate, spoon the saffron risotto onto warmed plates and arrange the Rockfish on top. Finish with crispy leeks, a scattering of lemon herb gremolata, micro herbs, flaky sea salt, and a light drizzle of extra virgin olive oil.
